Air Fryer Roast Chicken & Stuffing
Serves 6-8
Ingredients
For the chicken:
- Country Range 1.7kg whole bird
- 2 Tbsp Olive Oil
- 1 Tbsp Chicken Spice
- 1 tsp Garlic Powder
- 1 Tbsp Fresh Chopped Sage
- 2 tsp Salt
- String for trussing
For the stuffing:
- 1 Onion, Diced
- 1 tsp Crushed Garlic
- 10g Fresh Chives, Finely Chopped
- 50g Butter, Melted
- 250g Bread Crumbs (a mix of fine and course)
- 100g Mature Cheddar or Parmesan
- 1 Tbsp Fresh Chopped Sage
- 250g Chicken or Pork sausages
- 50g Turkish Apricots (Sultanas or dried cranberries also work well here)
- Salt & Pepper
Method
- Remove the Whole Chicken from packaging, remove giblets and dry the chicken roughly with paper towel.
- In a small bowl mix the olive oil, chicken spice, garlic powder, sage and salt to a paste, and rub generously all over the chicken. Set aside.
- Mix all of the stuffing ingredients together in a mixing bowl, squashing it all together by hand until it gets to a dough like consistency.
- Open up the chicken cavity and pack with the stuffing. Truss the legs together with string at the ends of the drumsticks and place the chicken into the air fryer.
- Set the air fryer to 180° C and cook for 55 minutes. Carve and serve with Gravy and sides of your choice.
