Method
Remove the Whole Chicken from packaging, remove giblets and dry the chicken roughly with paper towel.
In a small bowl mix the olive oil, chicken spice, garlic powder, sage and salt to a paste, and rub generously all over the chicken. Set aside.
Mix all of the stuffing ingredients together in a mixing bowl, squashing it all together by hand until it gets to a dough like consistency.
Open up the chicken cavity and pack with the stuffing. Truss the legs together with string at the ends of the drumsticks and place the chicken into the air fryer.
Set the air fryer to 180° C and cook for 55 minutes. Carve and serve with Gravy and sides of your choice.
